Milk 36% or Dark 60%? How to Choose Your Chocolate Shell
What cocoa percentages mean, how a milk 36% or dark 60% shell changes the taste of a filling, and which flavours pair best with each.

Every Cioccolato Aurea box ends with a choice: Milk 36% or Dark 60% for each filling. It sounds like a small decision, but the shell changes how the whole chocolate tastes.
What the percentage means
The number on chocolate is its total cocoa content by weight: cocoa solids and cocoa butter together. So a 60% dark chocolate is 60% cocoa, with the rest mostly sugar. A 36% milk chocolate has less cocoa and includes milk, which makes it sweeter, softer and creamier.
Higher is not automatically “better”. It is a different experience: more cocoa means more bitterness, more roasted and fruity cocoa notes, and less sweetness.
How the shell changes a filling
- Dark 60% adds contrast. It frames sweet fillings, sharpens fruit and makes coffee taste deeper.
- Milk 36% adds harmony. It rounds out spices, makes caramel feel richer, and turns creamy fillings into pure comfort.

For gifting: mix both
When you do not know someone’s taste, alternate. In a box of 8, two flavours in milk and two in dark gives everyone a favourite and makes the box more interesting to explore.
Try it in the Box Studio: you can switch every flavour between milk and dark and see your box update instantly.
